Recipe - Stir-fried Broccoli, carrot and fish fillet or Scallop 西蘭花炒帶子/魚柳
Ingredient
Broccoli, cut and wash in salt water
Carrot, sliced
Fish Fillet (marinade in lemon juice) or Scallop, pat dry with kitchen paper
Chicken Stock powder
Method:
- Cook the broccoli in boiled water for 3 mins.
- Pan fried the fish fillet or Scallop, roughly 2 minutes each side, until both sides turn opaque white. Don't overcook. Set aside.
- Pan fried broccoli and carrot. Add chicken stock powder and water, and cook until sauce reduced to half.
- Toss back the fish/scallop. Lightly stir and combine, avoid breaking the fish into pieces.
- Add thickening (cornflour + water) if needed, and cook to your preferred consistency. Serve hot.
