Recipe - Stir-fried Broccoli, carrot and fish fillet or Scallop 西蘭花炒帶子/魚柳



Ingredient

Broccoli, cut and wash in salt water

Carrot, sliced 

Fish Fillet (marinade in lemon juice) or Scallop, pat dry with kitchen paper

Chicken Stock powder


Method:

  1. Cook the broccoli in boiled water for 3 mins. 
  2. Pan fried the fish fillet or Scallop, roughly 2 minutes each side, until both sides turn opaque white. Don't overcook. Set aside.
  3. Pan fried broccoli and carrot. Add chicken stock powder and water,  and cook until sauce reduced to half. 
  4. Toss back the fish/scallop. Lightly stir and combine, avoid breaking the fish into pieces. 
  5. Add thickening (cornflour + water) if needed, and cook to your preferred consistency. Serve hot.
