Apple Crumble Pie

  Ingredients   1x 2x 3x ▢ 1   frozen pie crust  (or homemade) Topping ▢ 60g  flour ▢ 45  brown sugar   packed ▢ 50g  white sugar ▢  0.5  teaspoon   ground cinnamon ▢ 60g  butter   chilled and cubed Filling ▢ 8   Granny Smith apples ▢ 30g  white sugar ▢ 15g  all-purpose flour ▢ 1/4 tablespoon   lemon juice ▢ 1/2   teaspoon   ground cinnamon Instructions  Directions Preheat oven to 450°F. Topping: Combine all topping ingredients using a fork until completely mixed and crumbly. Filling: Peel, core, and slice apples into thin slices (approximately ⅛ inch). Toss apple slices with sugar, flour, lemon juice, lemon zest (if using), cinnamon, & nutmeg. Layer apple slices in pie shell (it will be really full) and pour any leftover juice over the apples.   Youtube video Ingredients Butter 25g Flour 25g  Chicken Broth - 250ml Cream / Milk - 100ml Diced Vegetables (any of : Mushrooms, Peppers , Carrots , Potato , Celery)   Chicken thigh meat, Sliced 400g Steps Sauce 1. Roux - Mix 25g Flour and 25g Butter on low heat in a pot  2. Add 250ml Chicken Stock , mix. Add 100ml cream , mix  . Low heat until it thickens . Turn off heat and keep covered.  3. Pan fry chicken and vegetables  (Steam diced harder vegetables like carrots / potato in advance to soften)  3. Add Chicken and vegetables into the sauce , combine and simmer a few minutes

Youtube Video Ingredients 2 x Capsicum cut into strips  1 x Onion thick sliced 3 cloves x Garlic sliced 1 x Celery stick sliced 1 handful x Olives. Sliced 150ml white wine 2 Tablespoon Tomato Paste 1 Can Tomato 4-6 pieces Chicken Thigh / Drumsticks  Method  Dry Chicken with paper towel and Sear chicken in large pan Remove from Pan, Lightly salt chicken Add onion / Capsicum / Celery to same pan , Mix in chicken fat Add sundried tomato (optional)  Add sliced garlic  Add 100ml white wine. Evaporate alcohol  Add 2 Tablespoon tomato paste Add 1/2 cup chicken stock  Add 1 can tomato Simmer a few minutes Pour all sauce into baking dish Add chicken into the sauce , crispy skin side up 160 Degrees Celsius for 45+ mins  Add Olives  Back into oven for 5-10minutes 

Nikujaga Beef Stew

  Ingredients 200 gram Beef slices  3 Potato - chunks 1 Carrot - chunks 1 Onion - Sliced Green snow pea 2 Tablespoon soy sauce 2 Tablespoon Sake 150ml Dashi stock Method  Lightly fry beef , remove most of the beef. Leaving a few slices in the pan Add potato, carrot to the pan. Cook until they start to soften Add onions.  Add beef back to the pan Add Dashi stock Add Sake Cover lid and lightly simmer (~10min)   Add soy sauce  Check potato are cooked through  Add snow pea  Cover and cook 1 more minute    

Beef Stroganoff

  Ingredients 1 x Beef Steak . Cut into thin strips 1 x pack (250g) mushroom. Sliced  1 Small Onion . Sliced  2 x Small Potato. Sliced 1 cup Beef or Chicken Stock  1 Tablespoon Flour 50ml cream Parsley  Method 1. Cut Beef steak into thin strips 2. Sear beef strips in pan . Do not cook fully. Remove Beef from pan 3. In the same pan ;      A dd 1 tablespoon Oil and/or Butter     A dd mushrooms, add onions , Add potato (optional)      Cook until soft. 4. Add 1 Tablespoon flour  5. Add 1 cup Beef or Chicken Stock  6. Add cream (adjust thickness of sauce by boiling off or adding stock as needed)  7. (Optional)      Add Mustard, Wostershire Sauce, Sour Cream 8. Add Beef back into the pan 9. Add Parsley to finish

Oyakudon (Japanese Chicken and egg)

            Ingredients  Chicken pieces Daishi (30ml) Mirin (15ml)  Soy (10ml) Onion (half , sliced ) Egg (2) Sugar (optional) Method 1. Add Daishi , Mirin, Soy , Sugar, Chicken, sliced onion to pan   ( Liquid should be enough to around 1/2 cover the ingredients)  2. Bring to boil to cook chicken, soften onions.  3  Beat eggs, and distribute into the boiling liquid.           4. Bolognese

  Ingredients Mince Beef (400g) Celery (1 stick)  Carrots (1) Onion (1) Red/White wine (1/2 cup) optional Tomato (1 tin) Tomato Paste (1 Table spoon) Bay Leaf (2)  Steps 1. Finely chop Celery/ Carrots/ Onion 2. Saute vegetables with some olive oil in Pot  3. In separate pan, Brown mince beef on high heat 4. Add Beef to Vegetables in Pot  5. Add Tomato Paste  6. Add Wine , boil off alcohol  7. Add Tomato 8 . Add 1 can of water, cleaning out the remaining tomato 9. Add bay leaf 10 . Simmer low heat for a few hours
