Chicken Cacciatore




Ingredients

2 x Capsicum cut into strips 
1 x Onion thick sliced
3 cloves x Garlic sliced
1 x Celery stick sliced
1 handful x Olives. Sliced
150ml white wine
2 Tablespoon Tomato Paste
1 Can Tomato

4-6 pieces Chicken Thigh / Drumsticks 


Method 

  1. Dry Chicken with paper towel and Sear chicken in large pan
  2. Remove from Pan, Lightly salt chicken
  3. Add onion / Capsicum / Celery to same pan , Mix in chicken fat
  4. Add sundried tomato (optional) 
  5. Add sliced garlic 
  6. Add 100ml white wine. Evaporate alcohol 
  7. Add 2 Tablespoon tomato paste
  8. Add 1/2 cup chicken stock 
  9. Add 1 can tomato
  10. Simmer a few minutes
  11. Pour all sauce into baking dish
  12. Add chicken into the sauce , crispy skin side up
  13. 160 Degrees Celsius for 45+ mins 
  14. Add Olives 
  15. Back into oven for 5-10minutes
