Chicken Cacciatore
Ingredients
2 x Capsicum cut into strips
1 x Onion thick sliced
3 cloves x Garlic sliced
1 x Celery stick sliced
1 handful x Olives. Sliced
150ml white wine
2 Tablespoon Tomato Paste
1 Can Tomato
4-6 pieces Chicken Thigh / Drumsticks
Method
- Dry Chicken with paper towel and Sear chicken in large pan
- Remove from Pan, Lightly salt chicken
- Add onion / Capsicum / Celery to same pan , Mix in chicken fat
- Add sundried tomato (optional)
- Add sliced garlic
- Add 100ml white wine. Evaporate alcohol
- Add 2 Tablespoon tomato paste
- Add 1/2 cup chicken stock
- Add 1 can tomato
- Simmer a few minutes
- Pour all sauce into baking dish
- Add chicken into the sauce , crispy skin side up
- 160 Degrees Celsius for 45+ mins
- Add Olives
- Back into oven for 5-10minutes
