Recipe - Rice in winter melon soup 冬瓜粒海鮮泡飯
Ingredient
Winter Melon (remove seed, diced)
Pork (diced)
Chinese dried mushroom (soak in water, diced) *Reserve the soaking water*
shrimp
scallop (diced)
egg x1 (beaten)
Rice (cooked overnight/in the morning, put in fridge)
Chicken stock x1 cube
Steps
1. In a pot, add chicken stock and the soaking water, with some more boiling water to your preference. Bring to boil.
2. Add in diced mushroom and winter melon. Boiled for 10mins.
3. Add diced pork, shrimp and diced scallop. Boiled for 5mins.
4. Add rice. Boiled for 2 mins.
5. Turn off head, stir in beaten egg.
6. Serve hot
